1 lb. Wild Boar Spicy Italian Sausage
2 lbs. Ground Bison
2 eggs
2 cups bread crumbs (or ground pretzels)
Red Bell Pepper
2 Tablespoons whole fennel seed
1/2 Tablespoon black pepper
1/2 Tablespoon paprika
3 Tablespoons dried parsley

Preheat oven to 400 degrees. Mix all ingredients making sure that everything is integrated very well.

Place in a traditional meatloaf pan or use a cast iron or stick free muffin pan. Drizzle lines of ketchup and top with a burst of dried parsley.

Bake at 400 degrees for 15 minutes, then lower to 350. Bake until loaf or muffin reaches 165 degrees or about 20 minutes per pound.

*Serve immediately with some hot mashed roasted garlic and Yukon Gold potatoes. Goes great with fresh green beans seasoned and cooked with Wild Boar Bacon.
