Not fatty but not lean-tasting!
Almost has a Bacon-esque flavor to it!
The Meat was very plump, juicy, tender, delicate, and without any gaminess!

We’ve been trying all kinds of different meats as a New Year Resolution. Antelope, Wild Boar, Elk, Bison, and then we found Yak at the Rochester Farmers Market. We were very pleasantly surprised at just how tasty it is! It’s like a mix of beef and bison but with a hint of sweetness. Next time for burgers I’ll add an egg and/or panko crumbs for a binder. But it has amazing flavor all on its own! I overcooked it to medium well, but it was still juicy and great. Thanks for helping us broaden our menu and palates!
We’ll be back for more!

My dad and I cooked up some yak burgers last night and I am still amazed at how tender and flavorful they turned out. We added one egg and a small amount of bread crumbs to the yak before cooking and cooked the 1/3 pound patties in a very small amount of olive oil. We take our burgers well done and these turned out much more tender than beef, bison, turkey, or any other burger we've made. Highly recommended that you give this a try. You will not be sorry!
