Julia Child recipe
1 1/3 cups coarse salt, 1Tbs cracked peppercorns, 2tsp ea.allspice and thyme, 1tsp ea. paprika, sage, crumbled bay leaf (I add a bit of sugar and juniper berries) Cover meat completely, Put in plastic bag, weight on top for 24 hrs. then massage every day and turn for 2 weeks in fridge. De-salt in water for 24 hours. Boil w/ celery ribs, carrots, onions 1 lb beef bones and herb bouquet of 8 parsley sprigs, 6 peppercorns 4 whole cloves 3 cloves garlic 2 tsp thyme 2 bay leaves in cheesecloth. I simmer 1 hour then smoke indirect heat but check to see that it doesn't get too dry or overdone. (I dip the meat in the broth from the simmer to keep it moist from time to time.). Julia simmered for about 2 hours for a small brisket like these. My friends love this..

OMG!
I received my shipment last week, I cooked one of the Briskets. OMG! It was so good. I browned it, then sautéed onions - layered the onions on the bottom of my stone casserole dish (Pampered Chef) put in the Brisket, put the rest of the onions on the top, added one teaspoon beef bouillon, 1 tablespoon balsamic vinegar, and one bottle of beer - but in oven at 350 for 3.5 hours covered - and then let it rest for 30 minutes in the juice It was to DIE for! Thanks! I definitely will be getting more Buffalo in the future.

THE BEST BAR NONE!!
Last night I made my first Brisket from the order I received. I used your recipe to the tee and it was ......THE BEST I EVER HAD BAR NONE!!!I made if for myself and 2 guests and we were fighting for second's pot lickin' good.You now have a LIFETIME customer...keep up the good work!!

Best Ever!
I just made the brisket for a dinner party. It came out soft and juicy. I seared it in a dutch oven, then sauteed onions and celery, added 2 cups of red wine and 2 cups of beef broth and braised the brisket in the oven for 3 hours at 350. Best recipe I've ever tried with any buffalo meat. This is now my family's favorite right next to my buffalo italian meatballs. Thanks Buffalo Gal!

Awesome Brisket
Have done one on my weber smokey mountain for 10 hours after marinating in red wine and spices and tried the Beer Braised Bison Brisket recipe. Both recipes turned out awesome. Let the next door neighbor try some of the smoked and he said it was the best roast beef he ever had. Sorry Bud it was Bison. Wife raved about both. Buffalo Gal service is excellent.
