Lots of compliments!
This cut is excellent. I purchased this cut and some bison ribeyes at the same time. The top sirloin cut had VERY LITTLE fat, the Ribeye had some marbled sections, which is fine if you like your steak that way. But anyways, I took these steaks, defrosted them and sliced them longways, put them on wooden skewers and marinated the skewers overnight with just some worcheshire sauce, a small amount of olive oil and some mccormicks "broiled steak" seasoning. Took the skewers to a picnic the next day & everyone LOVED them. You just have to watch because they do not take very long to cook.... great cut, I'm about to order a ton more of these. Look at the calories listed above... 240 calories for 8 ounces! That is the same as eating a boring chicken breast (and that is the super lean chicken breast cut too). Good, good stuff... I tell all the folks that are in the weight loss program I am in (I've lost over 100 pounds in the last 15 months) about buffalogal.com!

Sirloin Steaks
We just received our first order of bison meat last night and immediately cooked a sirloin for dinner. It was incredible! We have had buffalo steaks in retail restaurants where we live as well as when visiting family in South Dakota and this was, by far, the best steak we have had yet. I was very excited to find you and can't tell you how pleased I am! We're looking forward to placing our next order! Thanks very much.
