try this!
cut bison cube steak into half inch strips soak in dry red wine for 2 hours. roll in mixture of one half Fryin Magic and one half flour. fry to golden brown
Can't be as good for you as other ways to cook, but damn tasty...

Cube Steaks
This is our family favorite cut for all BISON...It is far superior to beef cube steaks and breads really good. They are not kidding when they say it makes excellent country fried steak...You will not regret this cut of meat...
